Over the years, when advising patients with high cholesterol who love cakes and biscuits, I have said ” you can make cakes without fat- butter , marg. or oils… I know a good recipe !!
Now that I have the luxury of being able to post on my website I can put it out there:
Low fat fruitcake
Ingredients:
1.5 cups each of raisins (or craisins!) , dried apricots, sultanas, currants, almonds chopped roughly, 1 cup date paste or dates, 2 lemons, 3 eggs, 1 dessertspoon each of cinnamon and mixed spice,750g wholemeal or brown rice flour 1/4 cup Agave syrup or honey, 200ml cold water
Method:
1.Preheat oven to 180 C,
2.Mix all fruit except dates and almonds with 500ml water and heat in saucepan, until steaming. Cool.
3.Chop dates , add 1/4 cup of water, bring to boil, then puree with Bamix or mash with fork
or use date paste
4.Grate zest of lemons and squeeze juice
5.Mix all of the above
6.Add eggs and agave syrup or honey
mix flour and spices and add to fruit mixture
7.Pop into lined 25 cm cake tin, shape of your choice
cook 1.5- 2 hours
Allow to cool in tin, then remove from tin
Slice and enjoy !
